Last week, my friends and I visited Omahe Mbah Giyo, a traditional Indonesian restaurant located at Jl. Gubeng Kertajaya I Raya No.15, Surabaya. Our group was excited to try authentic dishes that showcase the unique flavors of Nusantara cuisine.
For my meal, I chose Dori Sambal Matah, a dish that perfectly represents the fusion of fresh ingredients and bold spices in Indonesian cooking. Dori, a type of white fish, is fried to a golden crisp and topped with sambal matah—a raw Balinese chili relish made from shallots, lemongrass, lime leaves, and chilies.
